Buy deep dish 9″ pie crusts from freezer isle. Buy Pumpkin pie puree from the can. Pumpkin pie filling already has the spices in it and is easier to make than buying plain canned pumpkin and having to buy the pumpkin pie spice and brown sugar and such…..Follow the recipe on the can. (all u need are eggs and a can of evaporated milk). I’ve found that halfway thru the bake time, I need to cover the crust with aluminum foil, otherwise, it tends to burn before the pie is fully cooked…then again, u can skip the whole process altogether and buy a pie from walmart b/c their on sale for $2.50 for regular or $5 for a deepdish. If I ever resort to a storebought pie (like apple) I pop it in the oveb to crisp up the crust and warm it thru…it’s much yummier that way!
Try making pumpkin empanadas instead of a pie. Or mix whipped sweetpotato in with the pumpkin filling.

I think your typical pumpkin and pecan pie recipes are great, but i do have a good pie crust recipe for you. It’s a little more involved than most but it’s good.
Flakey Pie Crust (single)
6 Tablespoons butter, chilled
2 Tablespoons shortening, chilled
1 Cup all-purpose flour, plus extra for rolling
½ Teaspoon table salt
¼ Cup ice water, in a spritz bottle
Place butter and shortening in freezer for 15 minutes. When ready to use, remove and cut into small pieces.
In bowl of food processor, combine flour and salt by pulsing 3 to 4 times.
Add butter and pulse 5 to 6 times until texture looks mealy.
Add shortening and pulse 3 to 4 times.
Remove lid of processor and spritz entire surface with water.
Replace lid and pulse 5 times.
Remove lid and spritz surface again.
Replace lid and pulse 5 times.
Add more water in this method until mixture holds together when squeezed.
Wrap in plastic wrap and form into a ball, then press into a round disk.
While completely wrapped, place into refrigerator for at least 30 minutes.
Pre-heat oven to 375 degrees.
Place enough plastic wrap on counter wide enough for rolling and dust with flour.
Place disk of dough on dusted plastic wrap. Dust dough with flour. Cover with more plastic wrap wide enough for rolling. Roll out dough to desired size and shape and remove plastic wrap. Place into pie pan and remove other side of plastic wrap.
