Matthew

It souns like a big air bubble caused the crust to rise up. I'm sure it tastes just fine. If it looks ugly, cover it with whipped cream before serving.

It will really be fine. Everybody will have a chuckle about it. It's really no big deal. Enjoy your holiday!

Shannon

It should taste just fine. Cover it with whipped cream before you serve it and no one will know the difference. Sometimes things happen because we want every thing perfect for the holiday. I just finished making Parker House Rolls and had my counter top oven on broil. I couldn't figure out why the bottoms didn't get done. I put them back in on bake and they got done, but they sure aren't the best I ever made. Have a nice Thanksgiving.

Dale

for pumpkin pie you do not need to pre bake pie crust
follow Prof recipe
and when you do need to prebake a pie crust
it needs weight on it so it will not bubble up
you can use what you have like a bunch of beans
(hard uncooked) wrapped in a ball in foil
or some weights that you can find at stores
I have a small tiny glass pie pan I put rocks
in it and place the glass pie pan ontop of
crust to keep it from the bubble up

these things happen relax no one will notice
there are sites you can get quick recipe for crust
like using oil or shortening good luck
Happy Thanksgiving....

Sheila

If it was just the bottom shell there shouldnt be a problem. Did you poke it with a fork randomly before you baked it?

Poke it with one now, add the pumpkin runny batter stuff and bake it to cook that part. No problems...

Milton

Pumpkin question:

Most custards and pumpkin pies will continue cooking after they are taken out of the oven the are done when the inside looks like its not cooked but it will "set" while its cool.

This is taken right from a pumkin pie recipe:

Bake pie in middle of oven 1 hour, or until filling is set but center still trembles slightly. (Filling will continue to set as pie cools.) Transfer pie to a rack and cool completely. Chill pie, loosely covered, at least 2 hours, or until cold, and up to 1 day. Keep pie chilled until ready to assemble dessert.

hope this helps. enjoy.

From The Secret Ingredient Catering & Event Planning - San Jose, Ca

NEVER PREBAKE YOUR PIE SHELL - Here is a fool proof recipe, follow it exactly, and you will have a great pie

Famous Pumpkin Pie

Ingredients:

3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
1 unbaked 9-inch (4-cup volume) deep-dish pie shell

Directions:
MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.

POUR into pie shell.

BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.

Spoon a bit out if it tastes good. Cut and serve with whipped cream which'll hide a multitude of sins. After all the taste is the main thing. Just plate in the kitchen...

We've ALL been through this, think of it as a lesson, try and figure out what happened...and then go and buy a ready-made one, and no-one has to know! ;)
